Macaroni n Cheese Pancakes

When I first saw this I thought gross! But after making it I proved myself wrong. And that doesn't happen very often.


Ingrediants
2 C flour
1 tbsp sugar
2 tsp baking powder
1 tsp salt
2 1/3 C buttermilk
2 eggs
2 tbsp butter, melted
2 1/2 C cooked macaroni (1 1/4 C dried) (elbow preferred. Drained and Cooled)
1 1/2 C grated cheese
The recipe says to put maple syrup on. I thought this was crazy! But when I ate it I thought it needed something more. Syrup really brings out the flavor.

1. Whisk flour, sugar, salt, and baking powder.
2. Separately whisk buttermilk, eggs, and butter together.
3. Combine dry and wet ingredients. Whisk, but it will be lumpy.
4. Fold in macaroni and cheese with a spoon.
5. Over lightly greased medium heat cook cook like a regular pancake! About 1/4 cup per pancake.
6. Cook about 5 mins then flip. Cook for about 3-4 mins longer.
